For several years we have been running an all inclusive Cookery Course aimed at encouraging and training potential chalet hosts.

This year, due to interest from outside the ski industry, we are opening our courses to everyone with an interest and desire to learn about cooking, as well as potential chalet staff.

Our courses will offer:

Training in kitchen management, knife skills and food awareness

Menu planning, theory modules and guidance in catering for specialist diets

Timekeeping and time management skills

Experience in a small domestic chalet kitchen as well as larger commercial kitchens

Introduction to local speciality dishes, with a cheese and wine appreciation evening

Christmas unplugged – a step by step guide to Christmas dinner!

Qualified and specialist chef trainers

Training in food hygiene awareness

The unique opportunity to learn and practice cooking at altitude

A good grounding for a future career in catering

Additional modules will be offered for delegates wishing to pursue a chalet position during the ski season and these will include:

The skills you need to run your own chalet

The confidence needed to provide great guest care in your chalet

A step by step guide to the set menu we offer our guests

A guaranteed position with Esprit or Total for all course participants who fulfil our criteria

Upon successful completion of your ski season with Esprit or Total we will reimburse 50% of the cost of the course - outstanding value for intensive catering training!

The cost of the Cookery Course is £445 per person. This includes:

7 nights accommodation

All meals (most of which you will cook yourself)

5 days tuition

All food and equipment necessary for the course

One free day to enjoy all that the Alps offer in the summer

The courses will be held in Chalet La Chaumière, Les Gets, in the French Alps, and provisional dates are:

16-22 September

23-29 September

30 September-6 October

Travel to and from the course location is not included, but low cost airlines fly to Geneva regularly and assistance can be given with transfers to/from Geneva.

Weekly arrangements

Arrival at course location on Tuesday pm for dinner, Course Welcome and Introduction.

Training sessions commence Wednesday morning and run through till Sunday.

Monday is a free day to enjoy the local amenities, go walking or mountain biking, go shopping, visit neighbouring attractions or relax as you wish.

Departure is Tuesday morning.
